Café Vivant takes inspiration from the slow-growing, premium chicken breeds that were once mainstays of the American farmstead. Long before fast-growing industrial hybrid breeds, these Heritage breeds were prized for their distinctiveness and intensity - qualities we rarely associate with chicken today. Our mission is to honor these Heritage breeds - and the farmers who steward them - by reimagining poultry as the centerpiece of world-class dining.
Chef Jared Wentworth
Executive Chef Jared Wentworth has led a career defined by exacting standards and culinary innovation. Having opened the first Michelin-starred gastropub at Chicago’s Longman and Eagle and later holding two stars at that same city’s Kitchen at The Moody Tongue, Jared’s attention has turned to reviving this country’s long but largely forgotten history of premium Heritage poultry.
Our Mountain Home
Our menu relies heavily on ingredients from neighboring Santa Cruz Mountains farms. The region’s mountainous terrain and exceptionally complex soils produce a wide diversity of premium fruits, vegetables, and livestock, the best of which inspire our ever-changing seasonal menu.
